For a night of fine dining out in Bangkok, make a reservation at Adhoc BKK. This chic restaurant puts the spotlight on unique ingredients sourced locally, spun into a delicious 10-course tasting menu.

A squid ink shell, for instance, is a glistening shade of midnight black. The crispy shell is the blanket for a pleasant surprise, which diners will discover upon cracking the shell open. A dollop of creamy uni topped with pearly black caviar is served on a wooden spoon by the side, best enjoyed with the surprise the squid ink shell yields.

Fish is also done beautifully here. A slab of cod is pan-seared for a golden-brown skin, topped with caviar and garnished with pretty edible flowers and herbs. The fish is tender and meltingly fatty, its flavour accentuated by the salty pop of caviar. Surrounding the fish is a bed of wild, pan-fried mushrooms that lend an earthiness to the rich dish.
