      About

      Master chef Masato Shimizu, after whom this quirky sushi bar in Bangkok’s busy Watthana district is named, has been in the business for over two decades, working his magic hand at sushi joints in Tokyo and New York. In sushi-mad Bangkok, he brings his brand of sushi, created from super fresh direct-from-Tsukiji ingredients and expertly-crafted rice, and serves it up in an elegant atmosphere that’s at once casual, friendly, and unintimidating.

      Like the best sushi restaurants, there is no menu, and the selection of food is constantly evolving: omakase is the name of the game! You walk in, nod at the chef, and he prepares that evening’s selection of twenty or so sushi dishes and accompaniments, changing daily depending on what’s available from the markets and supply chain. Although the menu is never the same, regulars here clamour for Masato-san’s creamy sea urchin.

      It’s easy to leave your dinner in the hands of this expert chef. After a gruelling seven-year apprenticeship under Tokyo's sushi master, Kugou Rikio, he left for New York and, at the age of 29, served as head chef at Jewel Bako where he earned a Michelin star for his cuisine. It’s a feat he repeated with his next New York restaurant, 15 East.
