Opened by acclaimed restaurateur Alan Yau, Madame Fan represents a shift from the in-your-face luxury of traditional Chinese dining to a more subtle opulence. This is reflected in the menu, which focuses on premium ingredients cooked to bring out their best flavours.

    The Wok-Fried Crispy Duck is a must-try. Made with tender duck meat fried to perfection, this dish is crisp on the outside, tender on the inside, and goes perfectly with a bowl of steamed rice. Another signature plate at this restaurant would be The White Pepper Crab, a less searing version of one of Singapore’s most iconic fare. This seafood delight preserves the airy egg white sauce but uses white pepper for a more delicate flavour.

    Diners who love their carbs can indulge in the Claypot Japanese Rice With Japanese Sweet Potato. The claypot cooking enhances the taste of the dish and its accompanying items, giving the rice a heartier taste, while the Japanese sweet potato provides some delicate sweetness, balancing out the flavours.
