      Don’t let the idea of guts and brains put you off. Picking at braised entrails and grilled hearts might seem like a test of courage, but you’ll want to take that leap of faith. Because the food at 100 Mahaseth, concept aside, is utterly delicious.

      Said entrails, for instance, are slowly simmered in a spicy soup that is soothing and peppery. The combination of heat and silky, creamy innards is a reminder that offcuts, when cooked well, can be a knockout too. There’s also roasted bone marrow, swathed in a moreish Thai-style sauce, and khao poon, a creamy and slightly spicy dish that mixes fermented rice noodles with pig’s brain and coconut curry.

      But 100 Mahaseth has also thoughtfully put out a safety net for their diners. Err on the side of caution with options like a tender pork jowl smoked with longan wood, local dry-aged Thai beef savour the deep, umami flavors of this dish, and a hot dog smothered in spicy eggplant sauce. The service staff here are warm and friendly, taking the time to introduce the restaurant’s signature recipes before you place your order.
